    Default Any gates fans???

    I'm not a big fan of overly sweet BBQ sauces like the ones you get in KC Style bbq but there is an exception and that is Gates BBQ I used to work out of KC and really came to like their Hot BBQ sauce. I was looking for a place to buy it on line and followed a Link that led me to of all places Martha Stewart.com It seem that a few yra ago Mr. Ollie Gates was a guest and gave up the recipe on the show ( http://www.marthastewart.com/270595/barbecue-with-ollie ) and it is posted on line Lucky ME I made a batch today Boys let me tell ya it's the real Enchilada he didn't hold nothing back. This was for the basic sauce I found the Hot version here http://www.smoker-cooking.com/gates-bbq ... ecipe.html with a reduced recipe. I tested this out on some left over wings a little brisket and some Cheddar and jalapeno sausage, Give it a try it will make your lips smack.

    Smaller Batch of Gates Bar-B-Q Sauce…

    You might feel that 2-1/2 quarts of bbq sauce is too much to make at one time, so the following homemade Gates bbq sauce recipe will make about one bottle's worth.
    1/4 cup sugar
    1 tablespoon cup salt
    1-1/2 teaspoons celery seeds
    1-1/2 teaspoons ground cumin
    1-1/2 teaspoons ground red pepper
    1-1/2 teaspoons garlic powder
    3/4 teaspoon chili powder
    16 ounces ketchup 1 (24 oz bottle)
    1/2 cup apple cider vinegar
    1/2 teaspoon of liquid smoke, hickory flavored
    1/2 teaspoon lemon juice
    For the hot and spicy version, add an extra 3/4 teaspoon of red pepper, and just shy of 1 full tablespoon of ground black pepper. Follow the above directions for combining the ingredients.

    The world thinks KC BBQ sauce is all sweet. It is not. There is no definative Kansas City BBQ sauce.
    I believe the "sweet" thing is based on KC Masterpiece sauce. And guess what? KC Masterpiece BBQ went out of business a few years back.
    I like Gates now and then. I like Bryants. I also like several others here in KC, Quick's in KC and Oden's in Belton for example. None have a sweet sauce. And they are true KC barbecue.

    Thanks for posting the recipe! I'll give it a try.
    Do you cook the recipe or just combine all ingredents???

    This is supposed to be a NO COOK sauce. I have never been know to follow directions to well Mike I put all the Spices, Salt & Sugar in the vinegar and simmer it on low for 15 min then whisk in all the other stuff. This extracts all the goodies and melds the flavors better than just parkin it on the shelf to let it age a spell IMO.

    Cool . Thanks for bringin us the recipe. If I get some time in gonna try it. I think you're right on with the simmer idea too.

    No chickens were harmed in this statement. But it doesn't mean I didn't want to.

    I did a review of Gates BBQ down below.

    We had some just the other day. It isnt bad.

    I like to mix a bottle of Hot and a bottle of the sweet to use as a MOP. Its super thin and coats the ribs real well.
