Chester sauce...09-22-2013
okay....this weeks sauce
i stuck my head in the fridge, found some left over home canned goods....grape jelly, crab apple jelly, green tomato salsa, tomato sauce, water from crock pot that i used to finish off my under done pork butt (i'll call this a weak liquid smoke)...into the sauce pan...last of the leftovers... italian and western salad dressings..
K so now i need to find some flavors... bbq rub, spied a grapefruit...quick zest and juice, soy, worcester.. simmer...taste...need something...little red wine vinegar, no sugar, salt, lots of B pepper, onion and garlic powder...simmer...little boat motor action simmer to thicken with starches i just released with the boat motor...strain...taste....finish seasoning with aforementioned G,O,powder, S&P...

I really never know what is going to happen when i run out of sauce, i stick my head in the fridge and walla!!....this one has a nice back of the throat burn....green tomato salsa and black pepper , i'll likely add some sweet when needed
