    Default pies this spring.

    i had never made a all butter pie crust before so i took a stab at it this past spring.

    to honest i found Martha Stewarts crust to be the standard on the web and it was really good

    the one w/ merigan is a coconut cream pie , a simple homemade vanilla pudding , which is egg yolks, sugar, vanilla, milk and cornstarch heated to temp on the stovetop, cool and add the coconut and cut in with sweetened whipped cream , merigan is just the egg white whipped with a splash of sugar and some alum to help stabilize the egg wh proteins. i blind baked the crust, added the coconut mix, topped with merigan, and browned in the oven.

    the other is a rhubarb pie, rhubarb 4 cups??, sugar and flour , i may have added some nutmeg and vanilla, since that is something i would normally do, dumped in a raw crust and sealed with the other half of crust.

    I think I just gained 20 lbs just looking at them.
