    Default Mad about que in Maggie Valley

    We here. Set up. Will start cooking in what, 33 hours ? Geesh. Tomorrow after meat inspection we are crashing the pool at the place we camp at when we are up here. Then prolly off to camping world to check out the camper we've been looking at online. At some point ill prep the meat. Busy day

    Awwwww. Feel the love in this place? Man I gots my fingers crossed. A lot of "career" comp folks here. JOS (Michael), fatbacks, killer b's, Georgia boys, etc.... Aiming for top 20. But just doing what we do. Hope it hits the right tables.

    Butts and brisket (okie plug warning) and sitting here waiting on temped smoker. Rubbed both with my new pre rub (accent, white pepper, salt, onion powder, dry mustard and celery seed) Injected the butt with some okie swine brine mixed with cooked down apple juice. Then rubbed, twice now, with our rub. The brisket was injected with beef stock with some of the swine brine (we don't discriminate). Rubbed with a new beef rub. Equal parts Montreal steak, white sugar, paprika and Complete Seasoning. Again rubbed twice. Here are a couple low light phone shots. Better pics to come when the suns up

    Well. Now it's pouring outside. Weather say this storm is only 5 percent chance and there's a huge storm coming? Great. I'm hoping that this is it and its just early. Thankful that I've got a camper and insulated cookers. Now if only the bathroom was closer and/or I had an umbrella.

    Well... I'll start off with the fact that we learned a few things. First, trust your timeline, and also don't rely on said time line. If it ain't done, let it cook. 30th over all. 19 chicken (slightly over cooked ), 37th ribs ( way under cooked), pork 21 (bland...), brisket, just odd. Didn't taste like beef. Wet aged 30 days , other than that nothing new other than a rub that I tested last weekend and it was awesome. Oh we'll. met a lot of full time teams and got some good ideas. Also to be noted, our first ever KCBS event. Was a little busy there for a while. Not too bad. Just was focused more on that and not so much the basics. Pics coming once we are home. Phone ones are crap and upside down. Silly wife.
