Smoker racks

Hey everyone probably a stupid question. I'm in the middle of building a gravity feed smoker. I was just curious if anybody has ever used wooden racks. I know they sell those cedar planks to cook stuff on why couldn't a person makes cedar racks.

I'm no expert,but I think you aren't supposed to re-use the planks and my guess would be because you can't clean them as well as metal so you might get sick.

I'm sure someone with much more knowledge will come with the right answer.
