    Default What's on the menu 'next month'

    Here's my brisket for next months comp. 14 and change pounds of angus brisket. It's been in the cryo for 8 days. Gonna let it it for 20 more days, flipping once a day. Then will freeze for the last few days. Pull for thawing Monday before comp. this guy with a kick arse brisket method from Oklahoma says this method is awesome. Wink wink. Nod to Smokieokie.

    Looks like a Restaurant Depot brisket. Is that one of their Certified Angus brand or just the choice brisket? I did two CAB's a while back and they were both great. We also did one of the choice briskets at the same time and unfortunately, there was too much time elapsed between the cook and the eat to compare the two. I haven't wet aged briskets before, anxious to hear how it goes.

    Yep. Gotta wait. Contest is July 26. I can send more pics of it sitting o. The fridge I'd ya like. And yes, restaurant depot choice angus. We'll see.

    I will prolly be cooking a packer on Tuesday to take to the beach. So maybe pics them. It'll be comp trimmed and ill cook the trim bits too.
