I've tried rolled up ribs and rib rackholders but not with much success. With another rack added to my UDS I think I can get just as many ribs in the smoke. Here is a pic of the last rack holder I made so I can stack an extra grate in my UDS.

For F/F (Friends/Family) I will use a rib rack if I am doing a small cook for a group of us. I have used commercial racks before but have found making my own to be a lot more efficient. I used 3/8 OD stainless tube stock and welded them up. Commercial racks you'll need to go every other slot to get a decent smoke. But they do work.

Wanted to cook 4 slabs of spare ribs, but could not fit them all on the top grill. Went to Wally World and bought two large rib racks.
All of the ribs fit on the rack. I have a dome lid on my UDS, so there was not issue of the ribs not fitting under the lid.

If I am cooking 5 or more slabs of baby backs, I use the rib racks.
