    Default ABT stuffed thighs

    Getting set up for a day in the backyard


    Got plans for some ABT stuffed thighs. They've been brined in The Solution for Chicken and dusted with Rooster Booster. japs split and loaded with mix of cream cheese, marbled jack cheese, garlic and cumin. All wrapped up with bacon.

    Also did a 3lbs. chuck roast injected with Deep Beef and rubbed with bovine Bold. Also grilled chicken breasts on the Hasty Bake as well as some seasoned Ancient Sweets red peppers.

    I smoked around 240-250F using hickory and peach, about 2.5 hours, then rolled them around on the grill to crisp them up.

    Sauteed some asparagus with some more red pepper, yeast rolls with a garlic butter glaze and a sprinkle of basil. small salad.

    Very juicy and tender. Subtle jalapeno heat. Of course you can't go wrong with cheese and bacon!

    Chuck roast is not as tender as I wanted. I rushed it through the smoke. 6 hours to about 150 then foiled to 200. Taste is great but not pulling-worthy. Will definitely make a fine sammie tomorrow. May need to try a low and slow heat in the oven tomorrow. All in all a good feed and plenty of leftovers for this week.

    It all looks and sounds terrific. You did a mess of food for sure.

    Neat idea using stuffed ABTs for stuffing. I've thought about using them in a pork loin roast but never got around to trying it.
