Default Beef ribs must rule over pork ribs for this post

I ran by a local grocery store last week and they had 2 slabs of beef ribs. They were not the "commercial" ones that pretty much are meatless. It looked like they were the leftovers from maybe an entire carcas they had carved into. Of course I bought both then returned the next day to buy the rest. Here are a few pics from the weekend; beef ribs with montreal steak, baby backs with smokin in the dark rub, potato salad and baked beans. It was a busy weekend so you only get a few pics. But at least it did happen!

That's all I've got! Thankfully I've got 2 more beef racks in the oven for future cooks. Hmm, did I mention they beef ribs were $1.79/lb???

Oh...yeah, obviously I did a few abt's. Stuffed them with bacon, cheese, sauteed red bell pepper and onion and a little cilantro then wrapped in bacon. MMMMMMMMMMMMMMMM GOOOOOOOOD! The cilantro added just a little punch of flavor that took them over the top!

Not many pix, but good pix, and at least e DO know it happened.

Those ribs generally only happen when a store has a standing rib roast and the need to cut boneless rib eyes or a boneless roast. They pretty well had to be cut at the store.

Breaking down whole carcasses or even sides is pretty well non existent any more.

I can't believe I missed this thread! You got a hell of a deal on those ribs and they actually had something to eat .. very nice!

I'd keep an eye on that meat counter for sure.
