    Default First cook on new mod

    Fired up the offset for its first cook today. Nothing fancy ( not comp definately ) or big. Had a family pack of chicken thighs so seasoned with an upgraded version of my rub and finishing glaze. A couple of friends stopped by when I was pulling them off, imagine that, and stayed for a taste test. Nothing was left to make a plate for a pic, sorry.

    About 30 mins. before glazing.


    2 coats of glaze on back and 2 on the front.



    Cooking time and temp held real good. They are not comp
    size wise the visiting locusts left me one, the biggest, and it was really, really good. E.T.

    Thanks for the kudos guys, really appreciated. Junkie::: The glaze recipe is real easy.

    1) 1-C- Thai sweet chile sauce ( I like Caravelle brand ). Asian stores or asian sections in some big mkts is a good place to look.

    2) -1/3-C-seasoned rice wine vinegar.

    3) -1 tsp.- ground chipotle powder.

    4) -1-tsp.- Chimayo red ground chiles, or any NM ground chiles. Your choice on the heat level.

    If you need it thicked, a little tomato paste will do. Won't need a lot. Bring to a low simmer and cool. Makes a little over a cup.
