    Default Do you Have to hang snack sticks?

    Reason I ask is I don't have any type of upright smokers I see you all hang stuff in..........yet ( I'm going to build a plywood smokehouse )
    I do have a UDS that I am able to control my temps within about 10-15 degrees from whatever the outside temperature is up to 350 so I can do the drying and smoking the same as I have read but not hung up.
    This may be a goofy question, but I see no reason I can't curl it up or bend it in zig zags across the cooking grates.
    Or should I be patient and get my smokehouse built???

    What brings this up for me is... I finally got my Christmas/birthday/fathers day gift from collecting BPS gift cards and I'm ready to give it a try, I haven't tried to stuff sausage since I made my first batch and used my grinder with stuffing tube attached and I was no fun........

    I just lay them on expanded metal grates.
    I cook in the FEC-100 and have all 7 racks going.
    I cut them about 20" and stick em on the grates.
    After cooking I cut in half, just the right size for a VacPac bag.
    I have plans on a smokehouse too, but it ain't happening on the record heat days.

    MO fattened pork

    One great sausage hung or laid flat.

    I just want to get back to MO for all of it.

    My uds is a little different than most folks.It was designed to hang meat .

    I thought about that with the UDS, but that would put the lower parts awful close to the heat.
    I've got an idea like one I saw here where the guy stacked 2 barrels...........
    For now I think I'll put it on the grates
