    I sure loves me some bacon! We had run out of home made a while back so I finally found the time...

    Found this at the Asian market, smells HOT!!!



    Rubbed with a 50/50 mix of cure and pepper salt and bagged up to cure.



    after a week in the fridge, I soaked it for 45 minutes and patted it dry, peppered it, and tossed it in the fridge for a few hours to dry.



    Smoked it at 200 until IT reached 165. I know a lot of folks cold smoke their bacon but I like to hot smoke mine to 165, that way people can have it as crispy or as soft(yuck) as they like.



    I THICK sliced some for a monster BLT.



    .......and then I forgot to take pics of the sandwich. DOH!!!

    Oddly enough, there was no heat at all. I really thought(hoped) it would be.

    We're still here, you can't get rid of us that easily. Just busy.

    Where did you get the heirlooms? We got some at Whole Foods a while back, but they were not very good.
