What a nasty thing to do to someone that has an empty stomach. Now that is an entree that I could get used to Tim. Only you could come up with an encore like that.
I am slowly getting back to the real world and will be cooking again soon. Last month was a bummer. First Mama then 20 days laterI lost dad, but hey, the sun is shinning and it's 95degs on the back porch and I just received a new toy. Motor freight dropped it off yesterday. Got me a 48" round rock pit grill and roto that should be able to take care of any cooks that come along. Next thing I be looking for ( at ) maybe a UDS or a smoker that will fit in a 4' space on my back porch. Ideas?. I've sure missed you folks at the joint, but like a bad penny???

Thanks guys, I think that the new toy will keep me entertained for a while. Thanks Tim for the link. I'm still in the thinking stage. Those smokers look awesome. I'll do my burn in tommorow and try a cook this weekend. Will post some pics etc. E.T.

Italian Beef, do not know what the other is.
Cal 
Hardware : Cold smoker, Weber kettle copy, SFB stick burner, Weber Spirit E-310

The other is the hot pepper and veggie relish to put on it.
Italian Beef (debris style)
3# chuck roast
1 or 2 bottles mild whole pepperoncini (stems removed, liquid included)
1 or 2 heads of garlic
2 cans cheap domestic beer
2-3 TBS Italian herbs (seasonings)
Beef extract** to taste.
Brown beef in 2 TBS oil or butter in Dutch oven.
Add other ingredients all but the second bottle of pepperoncini.
Bring to a boil and simmer covered until fork tender.
Break down beef , add more pepperoncini if desired , then serve on well structure roll soaking the brad with the "gravy".
**for beef extract, you can use concentrated bouillon, BV liquid beef concentrate, my Deep Beef powder, or anything similar.
