    Default A-Maze-N smoker--For--Mes-40

    I have a Mes-40 (masterbuilt)
    somebody on site told me the other day
    that instead of adding wood chips
    to the smoker every hour I should get a A-Maze-N smoker where do you put the A-Maze-N smoker it in a Mes-40 is it only for cold smoking or all temp. I see there 2-sizes what is the difference besides 6x6 & 6x8 that takes saw dust & I see there's a new one that takes wood pellets which is better--Thanks--Ken

    Personally, I don't think that pellets or sawdust make as good a quality of smoke as chips, chunks or splits. There is something lost when you turn it into sawdust, and pellets are just extruded sawdust.

    I have owned two MES 30's and have never used anything other than chips in the the tray. If you have a similar chip loading tray to the MES 30, even with the thing running at 275F (max temp for the MES 30) you should only have to load the tray a couple of times to get four hours of smoke. Not sure the meat will take any more than that. I never had any issues with the products that came out of that unit with regards to flavor -- save the money and buy some meat to put in the unit instead.
