They are far from carp Jason. Their closest relative is the sturgeon. They are bone free and scale free.

The best way I know to describe the meat is that it is like a cross between lobster and catfish.

You do have to know what to do with them and how to handle and clean them though. If you don't do it right they taste like rotten fish.
