    Default Cold smoked, dehydrated Mushrooms

    Cold smoked dehydrated mushrooms

    Button (?) mushrooms :

    Sliced in 5mm (0,25 inch) slices.

    Sprinkled with salt, placed on absorbing paper for 3 hours to extract some of the water.

    Cold smoked : 40 minutes with Beech and Oak

    Dried 11½ hours


    When done, I put them in one of my wife's empty jam jars.

    If you can keep your hands off of them (which I almost never succeed in doing), they keep for months.

    Of course every time you open the jar some moisture gets in so they soften up near the end.

    Crumbled (if dry enough) or broken up (if not) on a fresh salad - great !

    Caution : Smoking mushroom gives them a very strong smoke flavor, use sparingly.

    Well Cal I'm gonna call this a good thread even though I don't like mushrooms. Most folks do, so thanks for sharing.

    while working in the woods, i recently found some prime Shaggy Manes (wild mushroom) also called Inky Caps, picked them, took loving care of them, gently put them in a paper bag with a bed of paper towels, made it back to the office without breaking a cap, finished my day at work and left them there in the bag on the floor next to my desk..... , when i returned, they already went black by the next morning, ..... son of a ... they are called Inky Caps for a reason

    this technique of storing them would have been perfect

    time to go out and find some more and break out the dehydrator
