    Default Masterbuilt-40 smoker--Damper

    I'm smoking 2 spatchcock chickens on my masterbuilt-40 electric smoker with the damper all the way open or would you have half open I'm using cherry wood chips & smoke is pouring out of it--------Ken

    I would open it as far as I could and still maintain temps. there is definitely such thing as too much smoke. If you have white smoke billowing out of it you need to open the door and let the smoke out. thin blue smoke is what you want. Thick white smoke will make the meat bitter.
