Inspired by someone elses post of stuffed bologna, my food A.D.D. took over and led me to want to try out my new toy, TGA enzyme.

The stuffed bologna in the thread was split i two, hollowed out , stuffed a then tied. It looked as though it might tend to leak out the goodies.

I split t 4#x3.5" stick and hollowed it out like a canoe. Then I browned off some chopped up linguica, grilled some Haloumi cheese, grated it and mixed it with the linguica. Then filled both the canoes and bonded it back together with TGA, meat glue if you will. Vac packed it overnight, and today, this is what I had:

Looks like it wasnever split in the firstplace.

Orignally, I was going to smoke it today, but then I began thinking about the Spring Fling up i Kansas in a couple weeks and decided to save it for that occasion. Any of you that are going to be there will get to bear witness to the fact that it actually is stuffed. We might even try to remember to get a pick or two to sharwith youto prove it. :msn-wink:
