			<content:encoded><![CDATA[<div>Decided on a 19 pound turkey today.  Tracey (Walle) and his family joined us in an early Labor Day cook out.  I injected the bird with Cajuninjector's Creole Butter.  I (sort of) spatchcocked the bird but didn't lay it flat so there's no backbone.  Used the Two Irish Fools So CA rub (sparingly).  <br />

Out of the smoker.  Didn't get any pics of the carving as our hands were a little slippery.  <br />

Also had to do some stuffed poblano peppers from Tracey's garden.  Stuffed with cheddar cheese and a combination of JD sausage, cream cheese and chipotle powder.  Good stuff!<br />

With that said, I improvised a new beer can chicken recipe using garlic cloves pushed right into the 5 lb chicken; I think I saw this on Justin Wilson's show a LONG time ago. Then, I coated the insides and outsides with Rooster Booster. Then placed it on my beer can chicken holder with 1/2 bottle of Tecate; the half went to the cook. :blushing:<br />
 <br />
<font face="Calibri"><font size="3">Next the chicken went on the gas side of my CG-Duo grill at 400 degree to sear the skin for 15 minutes. </font></font><br />

<font face="Calibri"><font size="3">Next, I lowered the temp to 350 and then I drapped a few slices of Wright's bacon on the top the chicken. This added some extra flavor and it helped keep the chicken breasts moist. NOTE: I also learned that if you are only using one burner in a gas grill, the side closest to the burner cooks faster - so I rotated the chicken every 30 minutes. </font></font><br />

<font face="Calibri"><font size="3">NOTE: I picked up an OS AW131 with a single probe from Amazon; these wireless thermometers will spoil you! I set the internal temp target of 180 degree. It took about an hour and half for the bird to reach my target temp. </font></font><br />

The finished product! The bacon was crisp but the chicken was perfect! Again, no plating pic - sorry. :oops: The end result was a very mellow garlic flavor that infused the whole bird. The beer can kept it moist inside and the combined effects of Rooster Booster and the tasty bacon gave the outside a wonderful flavor. Needless to say, there's none left. <br />

Time to break out the 26.75 Weber. Also had some chorizo that need to be cooked.<br />

Last year what with the price of peanut oil and such, I bought a oil less turkey fryer. I seasoned and injected them the same way and I must say, it tasted even better than the ones in oil.<br />

			<content:encoded><![CDATA[<div>Grabbed some Boneless/Skinless breastmeat, and pounded it flat to within 3/8&quot; of it's life. Sliced each breast into 3 long strips, Marinated 3 hours, and grilled 'em up quick on the gasser. Painted 'em once each side with commercial Teriyaki sauce while on the grill. Very nice worknight meal.<br />
<br />
The marinade:<br />
1/4 cup commercial Teriyaki sauce (J.E.S.) amended with the following:<br />
2 tbsp Mirin cooking wine<br />
2 tbsp Sesame oil<br />
2 tbsp Cider Vinegar<br />
1/4 tsp cayenne<br />
1/4 tsp red pepper flakes<br />
1 tbsp garlic powder<br />

My lovely bride prepared the components for this lovely meal and assembled them in a manner even I could not screw this up.<br />

Now to fire up the SRG and prepare to grill a variety of tasty substance. <br />

First are chicken thighs, boneless and skinless, zucchini and squash. This is for about six minutes.<br />
