I will have a heavy load so I want to take the easiest(on the vehicle) way. Should I go across thru Montana or down thru Salt lake city. I've never done this trip as I usually leave from LA and travel thru Arizona.
Also- anyone know the laws on tandem trailers out that way?

Stuffed with Hatch Chiles, bacon and onions then served with some Salsa Verde.

First I fire roasted some Jalapenos, serranos and tomatillos with my weed burner on the grill.

Then made some salsa verde

Cooked some bacon then crumbled, sauteed some onions in bacon grease then added some hatch chiles for a stuffing. Also added some fresh cilantro

Then tied it up and rubbed it with some Head Country Seasoning.

Added some Salsa Verde when loin was 135* and pulled it when it hit 145*. I think this looks disgusting, nothing like I pictured it in my head.

Rested and sliced.

Plated. Added some salsa to the plate, added cheese then I melted it. Served with some refried beans and corn tortillas. I need to keep this one in my memory bank its a keeper.

Hey, have any of you tried the Mojave fajita seasoning? I love fajitas but have never bought a seasoning for them. I've heard some folks just use seasoning salt and I've seen marinades out there. So, I saw this today and picked it up. If you've tried it, let me know how you like it. Here are a few pics. I "THINK" I smell a fair amount of chili powder in it but I'm not an expert on spices by any means. Ok, enough stalling, here ya go:

Had the Weber Kettle fired-up on Monday with the Smokenator, for a smallish pork shoulder (no pix of that, sorry). Decided late in the morning to go find some Jalapenos and try ABT's for the first time.

One store was out of Jalapenos, but had a few "Cubanelle" peppers, so I grabbed those for the hell of it. Hit another store and they only had about a dozen smallish Jalapenos, which I grabbed.

Cream cheese mixed with some shredded "Mexican" cheese and a pinch or three of cayenne. Since the peppers were so small, I sliced the Kielbasa Smokies in half lengthwise.

Here they are ready for the smoker:

And here they are after about 90 minutes on the smoker, at a pretty steady 225 degrees:

Yeah, they were pretty damned good, and I can't wait to do them again.

Place this mixture in your halved jalapenos, wrap with bacon, insert toohpick, and smoke for aprox.1 hour and 45 min!Everybody just went wild over them. This is the link to the website on the mustard. jailbrew.com :eating:

Not really a newbie to smok'in meats, but I am a newbie to The Q Joint. I've never competed, just a backyard guy, but I do cooked a little barbque for some groups over the years. I have an old Bandera for home that I'm finishing up a rebuild on with a new fire box, baffle, etc. I'll post a couple pics when I can get it painted. I'm a hobby welder so I do my own rebuilds. I live around Tulsa and it was too just too darn hot to do much welding all summer.

I've cooked on several different smokers, all homemade woodburners except for one Kingfisher and a couple big rotisserie type like some resturants use. I've viewed this sight a few times and I have enjoyed reading some of the recipies and tidbits about different smokers.

I do have a request. I wish someone would make a list of some of the acronyms or abbreviations for the different types of smokers or cookers I see on these forums; some are obvious and some I just haven't figured out, like UDS.

Anyway, I enjoy reading what you guys put up and I would be happy to pay for a membership if you guys figure how you're going to handle that.
