hello everyone

i have never cured a ham and i have a friend who has five pigs that they want to butcher in the fall i was asked if i would cure and smoke the hams i said sure but she wants them done nitrate free can they be done this way i have used tenderquick for curing bacon and i know that it will do a great job on the ham i will also be doing their bacon for them but this issue has not come up with the bacon hopefully it wont lol

Wish I could help you Huey, but I too have only done the buckboard bacon.

Look forward to seeing this thread develop though.
