I cut up some breakfast sausage links and browned them in my 8" skillet:

Then, I started some hash browns:

Once the hash browns were going good, I put the sausage on top and then poured a couple of beaten eggs over top. I put the lid from my 8" camp oven on the skillet and baked the concoction in the oven at 350 until the eggs were done:

Next was some sprinkled cheddar cheese and under the broiler it went:

It was very tasty. The sausage was a little bland. Next time I want either some spicier sausage or some diced ham.

Looks great! If you want it a little spicier, try some six pepper blend (Sam's Club). Darn, making myself hungry :msn-wink:.

Thanks for the kind words.

I didn't add any seasoning this time. Next time I will add something to the taters. I also think that ham would work better or loose sausage rather than the links.

heres a thought, chop up a fatty and put in it. I chop up a fatty and make omelets, but your dish would be a whole lot better than an omelet.

:thumbs up:Good looking vittles there, looks great. We have been doing similair cooks for years, only on stove top, and call them skillet meals. Also make them in D.O. when camping. Good chit man.

A fatty would definitely do well and would add a nice flavor.

I had seen the recipe for the "mountain man" breakfast in the Lodge cookbook and decided to try it in the skillet.

I made another one today. I browned the sausage a little longer and used a little more oil with the taters, but I poured most of the oil before it went into the oven. I also added some seasoning, and I baked this one at 375. I cam to the conclusion that the sausage I bought just didn't have much flavor. I do think ham would be better. The egg had more of a fried consistancy. I'm going to keep playing around with this method and ingredients.
This pic is bad, but it proved it happened:
