I conned Tracey (WALLE) into helping me with another batch of elk bacon. I wasn't even going to post this, but after tasting some of it, decided to snap a couple of pics. We used 13 pounds of elk and 12 pounds of pork butt. Coated heavily on both sides with restaurant style black pepper.

This is one pan of four (25 pounds total).

Tim, it's supposed to taste like bacon, especially since I smoked it using hickory. To me, it tastes like a cross between bacon and summer sausage. Good stuff though.:1987_food: I use the mix sold by Curley's Sausage Kitchen. http://stores.curleyssausagekitchen.com/StoreFront.bok

Just found your post. I use Curley's for my deer bacon. If you want it to taste like bacon, fry it in just a little oil. I tried using bacon grease 4 or 5 times before I just used oil. The bacon grease seemed to overpower the seasonings till they tasted like 'old bacon' when I used it. A friend that I had given some to, told me that it was great when fried in a little oil. I tried it and agreed! The bacon grease just seemed to over power the seasonings. It is definatly a different texture then pork belly bacon and takes getting used to, but I like it. A 50/50 mix of ground venison and pork butt, makes for a great 'minimal shrink/lean bacon!'

So this is kinda like a sausage meatloaf? Looks great, if it tastes "like" bacon I think I'd really like it.

Looks real good. I like bacon or bacon flavor alot:msn-wink:
