I was bored yesterday and I got to thinking about BBQ sauce and headed off the the kitchen for a little creative experimentation. What I came up with is a pretty good sauce that is Sweet and Bold. I tried it on some Chicken and some chopped Brisket and was very pleased with the results.

BluDawg's Bold & Spicey BBQ Sauce

1 cup ketchup
1 cup Red wine Vinegar
1/2 cup brown sugar
1/4 cup molasses
1/2 tsp salt
1 tsp back pepper
1/2 tsp onion salt
1/2 tsp garlic salt
1 1/2 tbl butter
1/3 cup diced onion
*1 1/2 tsp liquid smoke

Sauté the onion in the butter with a pinch of salt until softened.
In a 1 qrt sauce pan mix the remaining ingredients over medium heat and add the sautéed onions and as much of the butter as you can get out of the skillet. Simmer sauce stirring occasionally for 45 min or until it coats the back of a spoon with out dripping remove from heat puree in the blender for 1 min and bottle.
* you can cook this on the pit and eliminate the liquid smoke.

Sounds good Dawg. What to you think it owes its boldness to?

You get the RWV in the center of the tongue then the pepper warms the sides, with just enough sweetness to make it pop.
