Oooey & Gooey Mac& Cheese

This recipe takes a little twist in that the Pasta is cooked in the milk, The starches from the pasta thicken the milk making a velvety smooth sauce base.

1 lb pasta (your favorite shape I like Cavatopi)
+/-2 quarts whole milk
1/3 cup sour cream
1/4 tsp fresh ground nutneg
Salt & *pepper to taste (*pinch of Cayenne)
1/2 tsp mustard powder
2 1/2 cups grated **Colby & Jack cheese
1/2 cup freshly rated Parmesan cheese

** use what ever cheese you like C&J is my norm

In a deep pot add the pasta and enough milk to cover by 2". Over med /low heat gradually bring to a simmer string occasionally to avoid scorching and stir in the spices
Simmer until pasta is al' dente and sauce has thickened Remove from the heat stir in the sour cream all the Parmesan and 2 cups of the grated cheese.
Transfer to a baking pan or a buttered casserole dish.
Cover the top with the last 1/2 cup and bake at 350 about 20 min until cheese on top has started to get brown and Bubbly.

This recipe is easily adjusted up or down the important thing is to cover the pasta with the milk by 2"

Very nice Blu! I like the twist with the milk. I'm sure it adds a certain creaminess to the Mac N Cheese.

very intersting way to make the Bechamel sauce!

With your permission, I will try this tonight. Also with your permission, I will add a few chunks of aged Swiss cheese right before baking,
