The deer jerky this morning wasn't quite enough to satisfy my cooking needs for the day. So, this afternoon I thawed out some salmon and put together a fatty for a short cook. I used my charbroil gas grill on low heat along with a couple of chunks of hickory for the smoke.

The salmon was seasoned with a little olive oil and lemon pepper seasoning. I brushed it a few times with butter during the cooking process. It turned out great. Done perfectly where it just flaked apart when eaten.

The fatty was a simple breakfast fatty with bacon, eggs, diced potatoes, onions and cheddar cheese all wrapped up in a 1 pound chub of "hot" jimmy dean sausage.

Hope you all enjoy the pics 'cuz there ain't much left. Maybe 3-4 ounces of salmon and that's about it. Enjoy! Also notice the sidedish of potatoes and onions to go along with it all!!!

Now that's what a fatty should be, an all in one breakfast!

Right at 1/2 hour. Since I was using my grill the lowest temp setting still yielded a temp of 300 degrees. If I had done it on my smoker at 250 it probably would have cooked for about an hour.

I usually do mine between 45 min and 1 hr depending on the thickness. I like to cook until I see the juices showing opaque as they come out the middle
