Time to cold smoke some salmon!!!!!!!
2/3 cup kosher salt
2/3 cup sugar in the raw
Mixture of Red peppers, crushed pepper corns, garlic. Allspice, dried red bell pepper.
I was kinda thinking about brushing with some good rum or maybe some whiskey before cold smoking
I think the rum might add to the allspice but you cant go wrong with whiskey :D

a salesman stops by my office and drops me off some whiskey so..... I'll take this as a sign from god :shock: the poor wire rep. would have had better luck if he would have brought me 40# of lump :twisted:

That Salmon looks Great! I like the Single Barrel if I drink whiskey. I like Gentleman Jack as well.

So the rub was like a dry brine? How long did you let it sit? Obviously you rinsed it all off before smoking?

Bbq Bubba, yes sir it was a dry cure i think it cured for about 5 days. after the salt pulls some moister the salt dissolves
