hello from new mexico.

green enchilada casserole
12oz green Chile (blended)
ĺ cup chicken stock
2 tablespoons of minced garlic
1 tsp Mexican oregano (please donít substitute with Italian)
Salt to taste
2 lbs of shredded chicken (Iíve used supermarket rotisserie and leftover smoked)
1 white onion (optional)
1 can sliced olives (optional)
A lot of cheese please (I used cheddar and jack blend)
I used 11 Flour tortillas but corn works (I like flour in casserole and corn in rolled enchiladas)
Make your base chicken stock, garlic, oregano and salt simmer a bit add blended green Chile. Simmer a bit longer. keep in mind how wet you want your casserole. I layer sauce, tortilla(s). chicken, cheese, sauce, olive and onion. Do this until you run out of room or stuff.

Man that looks great!

I got questions.

Were the chilis really hot?

Can you buy them on line?

How many layers did you do?

If you are buying store brand chicken stack ( heaven forbid) Kitchen Basics is head and shoulders above Swanson. We think that Swanson is not much more than salt water.

the chilis are warm i would not say hot (but i like my stuff hot)

idk about the online i know most walmarts carry it in the frozen section

i think this one went 4 layers

i try to make my own stock most of the time the wife ran to the store

Never seen that in a WalMart or other store around here. 'Course you ARE in NM - red or green??? :msn-wink:

Great looking casserole!!!!!. I prefer green Chile enchiladas, especially if I can get my hands on some Hatch Chilies.

Tim, I found some of those chopped chiles in a Save -a-Lot store. I don't know if they are in your area but I do know they are nationwide.They were in a bag and not a tub and haven't tried them yet.

thanks again y'all!!!! I've lived in CA, AZ, NM and Texas i was able to get them there so i kinda thought you could get them everywhere. i've used canned enchilada sauce with good results just check the can if its made in mexico it might have a lot of MSG

That cassarole looks great. Those frozen Green Chilies that come in that tub are terrific. I've never seen them in OK, I pick them up at the United grocery in Amarillo. They're reasonably priced and they come MILD or HOT. I've gotten the HOT before for green chilie stew and it was so hot that most people couldn't eat it; some of those New Mexico green chilies can get pretty warm, but I think they have the best flavor. The mild are very flavorful and consistently mild. If you stop in or around Amarillo to get the frozen chilies, pick up a jar of Old Tascosa salsa; its made in Amarillo and its also very good.
