Thanks Y'all. This is the first I've smoked on my smoker in months. It is a very old Charbroil offset.
That is a rolled Pork Loin. Just stuffed with Stove Top Stuffing. Turned out pretty good.

Three racks of St Louis, Rubbed one with Neeley's rub, one with Sticky Fingers and one with Steve's Bamm.
Chickens were done on the gasser. One was rubbed with Lemon Pepper and on with Badia Complete Seasoning.
Pork loin was knife rolled out and filled with Stove Top Stuffing and rolled back up and smoked.
The Butt was smoked with only apple juice srayed on it occasionally.
Fattie was filled with shreadded cheddar cheese. All smoking was done with charcoal and apple wood.
