Ok, start with a boneless loin roast of at least two pounds. Soak some butcher's twine for about 20 minutes (about the amount of the prep time of the project). Butterfly the roast lengthwise about 3/4 deep and prepare a filling with 1/2 lb pork sausage, 1 egg, 1/4 cheddar cheese cut into 1/2 inch cubes and some saltine crumbs, so that the mixture retains structure, for lack of a better term. Fill the roast with your sausage mixture and close it up. Now wrap the roast circularly with thick slices of bacon, leaving no open flesh, except for the exposed ends of the roasts. Tie the bacon down tightly with the wet butcher's twine. Smoke the whole roast for 5 hours. I've found that hickory or apple chips work especially well for flavor. I have done this before, but unfortunately, I have no pix. Working from a public access facility! Oh well. I hope everyone gets the general gist and tries and enjoys it. Good cooking all!

Never tried this, but it certainly sounds worth trying for sure!
