View Full Version : Beef Ribs on a Weber Q320

Stuck home by myself on Christmas eve because I had some surgery the other day (bionic toe) and don't feel like travelling.

Decided to see if I could get the temp low enough to do beef ribs on the Q320, since there would be no one to complain if it failed :)

Rubbed the bones up with Bill's Beef Power Rub (http://www.hastybake.com/recipes_beef.html) wrapped in saran wrap for 5 hrs.

Turned off the outer ring burner, covered the center burner with foil, and turned the center burner down as low as it goes.

The above created a consistent 210 on the built in thermometer. I flipped them once, and let them go 2.5 hours. Plated up and dug in...

Thet were a tad tough yet, I should have let them go longer. The power rub was not meant for ribs (It will be great on roasts) so was just a tad salty. Finished up with a local BBQ sauce (Kinders). The dogs loved the bones when I waas done.

Brisket on a stick.
Your ribs look fine, probably needed to cook a little longer.:thumbs up:
I normaly cook beef ribs at 250 degrees for 7 hours.
Internal temp of 205 degrees, they turn out perfect IMHO.

Maybe not the greatest, but you still ate and so did the dog. And in the process you found a good way not to cook up those bones. Thanks for sharing buster - Merry Christmas to ya.

Those ribs look great. I will be cooking some of them next weekend.
