View Full Version : Drummed duck drumsticks

I had bought a bunch of duck legs last winter to make confit with and never got around to it. They were getting in the way of summer food in the freezer so I thought I'd give 'em a little cherry smoke and save the leftover meat for salads and such.

It was the Okette's b' day and she wanted to do some running around so the drum was left unattended for a while and as usual, they got a little overdone:blushing:, but they were still pretty good.

Just normal cooking at the Okie Ranch I'd say!
They look great. Bet they ate fantastic.
That ol' drum does fine by itself.

Actually, the Asian market sells legs only. Legs seem to make much better confit than breasts.

That was my first thought too.

I ain't never seem them in the stores packaged seperate.

I need to find me a good butcher

I've never eaten duck, but those look good enough to eat.

Never eaten duck? sounds like a good reason that you should.

If you do a whole one, remember to cut slits into the skin and fat of the breast and cook it breast side down for most of the cook. It takes quite a while to render the fat out. Save the fat though. duck fat is bokoos of gourmet when you need fat for any reason.
