Came across this on Craigs List:


I'd be interested in what ya'll think as far as a good way to complete this, as a side box maybe, or a propane or a charcoal cooker or what all?

I'd say as a hob cooker, I'd prolly want to use charcoal w/ back up gas. Just for the direct heat crispy skin factor.

As a smoker, I'd add a firebox and burn logs.

That is a pretty good start for a great hog cooker! The ones I have seen use charcoal. There are several of these in Memphis every May....

It also works great for chicken. They place a a couple of charcoal baskets one on each end and cook the chicken indirect heat. Baskets are approximately 16 x 16 x 24 inches. The Tresel Stop in Hamilton Michigan has three of these and has BBQ Chicken every saturday night. Each one holds about 50 chicken halves. If you go by there the owner will be glad to show off his babies. He told me he has owned this restaurant for 35 years.

I personally would not mess with gas or a wood firebox. Stick with the charcoal, but that is me!
