I just had to share this one, it's delicious! We make this chowder every fall and I did a double batch for my fish boil yesterday and it all disappeared.

Adirondack Salmon Chowder

6 slices bacon, cooked and diced
stick butter
2 cups carrots, diced
cup chopped onion
cup diced celery
1 cup chicken broth
2 teaspoons chopped garlic or powder not garlic salt
1 tablespoon old bay seasoning
2 cups diced potatoes
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon parsley
1 teaspoon dried dill weed
2 lbs salmon, de-boned & cubed 1
1 quart milk
1 (15 ounce) can creamed corn
cup flour
1 teaspoon cornstarch
1 8 oz. pkg. Cream cheese
2 bay leafs

In large soup pot cook bacon, remove bacon from pot and chop.

Add to bacon fat butter, carrots, onion, celery, and garlic.

Cook until onions, carrots, and celery are tender.

Stir in bacon, broth, potatoes, old bay seasoning, parsley, dill, salt, and pepper.

Bring to a boil, and reduce heat. Cover, and simmer 20 minutes or until potatoes are tender.

Stir in salmon, milk, creamed corn, flour, cornstarch, and cream cheese.

Cook on medium, stirring frequently until heated through.

Serves 6 adults

Never had salmon chowder, looks good! I am going to give this a try sometime. Have you ever used smoked salmon?

I love a good clam chowder, I bet this is every bit as good. Can't wait to give it a try probably later when it cools down some more - chowders just seem to hit the spot on cold evenings.

Sounds great Timbo. How does is reheat as leftovers? I may have to try it soon.

Spose a fella could use cream for some of the milk?
