Smoked some leg quarters on the SDS Drum. We were camping at Bucksaw Park on Truman Lake, MO with friends.
Had this been a competition I am satisfied these would have been top finishers.
Smoked at 300F with Happy Holla Rub to 180F internal temp., then turned and went another 45 minutes to crisp the skin on the other side. The chicken was absolutely moist and delicious! I see no point in wasting time brining poultry. Mostly just adds salt, and I don't need that.
Unfortunately, this is all that was left of 10 leg quarters. Fortunately, BBQ Bubba can't say it didn't happen! :msn-wink:
