I decided instead of smoking with Daddy Hinkles marinade, I would grill the food so as not to mask the flavor with smoke flavor. I don't know if it makes sense or not, but the flavor of the marinade really came through. The main dish is the pork chops. I had three elk backstrap steaks thawed which needed to be cooked, so tried the Daddy Hinkles on them too. Also did a few honey glazed pinapple sections. Now I just need to see if I can find Daddy Hinkles in the grocery stores in this part of the country. It's excellent! I just drizzled the liquid marinade on the meat and coated with the dry maridade and grilled. Quite simple and delicious!

Man, look at the sizzle still on the chop. That's what I'm talkin' about.

It is available online if you can't find it in the stores. Lee @ DH would prolly approach the store in your area about stocking some if you emailed her.

Those are some great looking chops. By the way, what does elk taste like? I've heard several folks describe it as a great dish and a little lighter that beef??

Great looking pork / elk Bassman! Even the pineapple looks interesting sitting on that plate. Looks *****. I gotta go eat something now.

Thanks for the replies! Florida Bill, elk tastes similar to beef without the fat. Consequently, it's difficult to get it tender when done on the grill. We eat more elk, deer, rabbits and fish than anything else. If you were anywhere near me, I would fix you up with some!:msn-wink:

The pineapply is grilled with the honey mixture that I posted in the "sides" forum. When you bite into it, it's like an explosion of pineapple flavored candy! Yum!

I haven't had a chance to check the stores here for Daddy Hinkles marinade. If they don't have it, I'll bet I can get them to order some.
