My lady had a birthday yesterday, so I asked her if there was anything special she wanted for dinner. "Tortellini Salad!" was her immediate and enthusiastic rely.

Well that's something I've been meanin' to do anyway. I's been too long. So here we go;

Started with a package of three cheese 'llini's

Cooked according to pkg. directions and drained.

other ingreds.

sliced wax banana peppers

marinated artichoke hearts, lightly chopped

a good Italian dry salami diced

The dressing. Red vine vinegar, EVOO, chopped garlic(LOTS), oregano, sea salt.

Then I added a can of black pitted olives and an 8 oz. tub of crumbled feta with basil and sun dried tomato.

:drooling: This is something you can play with to make it your own. Add other stuff like sun dried tomato, roasted peppers, pepperoncini, etc.

We made a meal of it. Great as a side as well.

I love that brand of tortellini, many others fall apart well before that perfect point of al dente. Thise are the same ones I use for my signature Italiion fatty (http://72.167.135.4/forum/showthread.php?t=6487).

Fine looking Birthday meal! :thumbs up: I'll have to give that a try sometime, love the idea of using Tortellini for pasta salad!
