Italian Sausage Cornbread Dressing
2 lb LINK Italian Sausage
2 bx generic Cornbread mix
Buttermilk (for Cornbread mix)
Cayenne Pepper
Cast Iron skillet
Grill or Smoker

Cooking Instructions:
Fire up the grill, split the sausages and lightly cook till just done. Scoop out the meat from the casings and set both items aside. In the skillet add some butter, onions, celery, spices and the crumbled meat. Sautee do not brown. When done remove leaving oil in pan. Heat pan to HOT in the oven, make Cornbread batter, dump in Sausage mixture stir, then pour in HOT skillet. Bake till done. WHILE it is baking take the Sausage skins back out to the grill and brown them till crispy.

Serving Suggestions:
Scoop out or slice Cornbread and serve with a crispy skin on the side.

Additional Comments:
To use this as a stuffing just bake it as in my recipe and then crumble. I add some extra buttermilk to keep it moist if using for a stuffing. This recipe is awesome with just about any meat that I have ever had it with.
