I asked for input on some marlin I had asked for input on.

I decided on a Japanese style marinade and dipping sauce, cooked it fairly rare, with Thai style cucumber and carrot salad. We also had two of th Okette's most superior stuffed sweet peppers that needed eaten.

Here ya go

In the marinade

Just curious, how much sesame oil did you end up using? What are the various specks floating in the mariande?

Looks good. Sorry I wasn't able to get back to you on the Thai Vinagrette Cukes. Do you still need some hints, or did you get that figgured out?

Prolly 1/4 cup or so.

the flecks are the garlic, ginder and serrano peppers that didn't get totally ground up. I like the rustic appearance.

Yeah, we got it done. Sugar, RWvinegar, Mirin, sugar, cilantro. Pretty simple.

I really can't give you much more than I did I just kinda did it by taste. I can tell you though, the soy to water ratio was 1:1.

Lotsa grated ginger, lotsa garlic.
