I was in the Publix deli section today getting some lunch meat. I decided to try some pancetta, which I have never had. All of the info that I have found in a quick search says that it is cured but not smoked. I've seen nothing in it regard to cooking method. I take this stuff is good to go as is or it wouldn't be sold along with the other deli meats. Am I correct?

My understanding is pancetta is mostly used to flavor other foods. Kind of like adding bacon to beans. I think it's cured, but not enough to make it safe to eat straight.

Personally, and this is me, I'd cook it before trying a pancetta sandwich. I don't know if it's really necessary, but I'm a bit paranoid about uncooked pork.

My plan was to throw it on the grill and then put it in a grilled pita, but I am curious about the item as it was in with the other deli meat. The lady at the deli offered me a sample as she was cutting it, but I declined.
