Do you prefer your brisket slices lightly sauced or O'Naturale?

Au jus only, but then I talk to more judges that like a little sauce on them than otherwise.

Depends how flavorful your naked brisket is.

Straight up, just slice it and put it in the box. We're judging meat and how it was prepared, not sauce. :msn-wink:

So Mike, as a judge, your saying nothing sweet on your brisket?

I know several that win that way Bubba.

I think it is a matter of beef or sweet, and I also think that there are judges that roll one way or the other.

I have heard in the tent that "It didn't even taste like brisket, it just tasted like beef" and I have also heard "How can they expect to win when it tastes more like sauce than beef?"

For comps, that's what I'm sayin'.
They generally have the sauce contest separate from the que.
I'd like to see sauce banned from meat turn ins. And the frilly green stuff also.

I'm just sayin'............... :D
