My wife and Mother-In-Law love this and I make it about once every week or two.

The ingredients:

sauteethe onions with olive oil and some garlic powder

I use a towel to squeeze the water out of the canned spinach. I rinse of the towel to get any fabric softener out of it.

Drape the towel over the strainer and put one can of spinach in

wring out the water

Mix all the ingredients and sauteed onions

Devide between 2 pie crust and put in the oven at 350* for 50 to 55 minutes

Make a pot of coffee and wait... ((I saw this same coffee pot in another post on this site.))

All done. Let cool and cut.

Spinach Pie

2 cans of spinach 27 oz each
1 ricotta cheese 15 oz container
1 feta cheese 8 oz block
2 onions
Garlic powder to taste
4 eggs lightly beaten
2 pie crust
Olive oil to sauté the onions

Sauté the onions. Wring out the spinach. Combine all the ingredients and divide into the pie crusts. Cook at 350* for 50 to 55 minutes.

:D Well I don't get cactus her in Ohio. Never even heard of eating cactus until perusing this site. So spinach and asparagus and lettuce are about all the greens I get.
