Ok Ya'll, I am looking for some help / ideas for a pork loin injection.. I'm looking for a very strong Apple injection for some loins I am doing. I tried something last weekend and it was just a bit flat. Any ideas or suggestions would be cool.
Here is what I did,
Apple juice,
Apple jelly,
salt & Pep.
I Marinaded it over night and smoked it with Hickory ( out of apple ) and like I said it came up flat.
Soooooooo What do ya think?

I think cook hot and fast, put the flavor heavy on the outside, and pull it off at 145.

Pork loin is such a fine tight grain that it is almost impossible to get good even saturation form injecting.

Brining would be more effective, but if you cook it right, it really isn;t necessary.

Also. bone in loin will always be better than boneless.
