Chicken! I know, crappy rhyme. But this is a tale of three rubs. I recently purchased several rubs including Smokie Okie's Rooster Booster, JB's Fat Boy Rub Basic, and Head Country. I posted a thread about them (I Got Rubs!) and remarked how similar in flavor Fat Boy Rub Basic was to Head Country. Just a taste of each out of the shaker were so close that I didn't think I could tell the difference blindfolded.

But the real test of any seasoning should be judged on how it tastes when applied and cooked for it's intended purpose. So I decided that two identical meats should be seasoned and cooked at the same time and temp and then taste tested.

Still cravin' rotissed clucker thighs after forkin' them up last time, I decided that that would be the meat to use. So I did the following:


Here you can see FB Rub Basic was applied to the piece in the upper right, while HC was used on the bottom right. They do look a little different. The four on the left were Okie Boosted.


Then they were all loaded into the spin basket in the same order as the first photo so I could easily keep track of which was which. Then smoked with pecan at 325 for an hour and a half or so.




Here they are placed back into the baking dish from the first pic, unloaded in the same order.


After a rest, I had to restrain my wife from attacking the whole plate until the taste test was done. I took a bite of the Basic. Maaahvelous! Then a bite of the HC. Maaahvelous! After repeated bites, Mrs. Shoots and I agreed that they were equally good. The only difference was that the Head Country was just a tad sweeter; and I do mean a tad. I doubt that guests at BBQ chicken dinner would notice the diff. I think I only noticed because I was looking for it.

So there you have it. HC is sweeter IMO, if that matters to you.:shrug:

Now why was Okie Boost included in this test?:shrug: Because it's forkin' good!:eating::eating:

That was a great side by side test. :sign0092: Wish I could have been there to help with the testing. :eating: Sure some beautiful looking chicken thighs. Yes the Head Country is my allways keep on hand and for sure the Rooster Booster along with an assortment of other (I am a sucker for rubs). :wings:
