They came out pretty good after a little time in the frig.

Thats a lot of cheese. What temp did you keep it at? I love smoked cheese, gonna have to try that. :thumbs up:

Great looking cheese. I tried to some some cheese a while back in my WSM and used some ice in the water pan to keep the temps down. When the ice started to melt some of the water dripped on my coals and gave the cheese a real bitter taste.Had to throw it out.

Apple is a good choice for cheese.

What tep did you run and how long?
Apple is a good choice for cheese.
I try to keep the temp as low as I can which is about 90 degrees, I have an electric hot plate with a stainless steel pan for wood chips. I let it run about 3 hrs.
I have used pecan, my favorite. I have mixed apple and pecan, apple and hickory, and pecan and hickory. All have come out really good.

That was some 5# mild cheddar from Sam's Club.


I miss that Govt. cheese. It was excellent stuff!
I know what you mean, that was some of the best cheese.
