I'm doing two briskets today on the chubby. I had a #@$!#@$!#@$!#@$!#@$! of a time getting it to reach and hold 290:tap:. When I went to flip and foil, I pulled the one on the top rack first. While I was farting with the probe and foil, I noticed the guru finally jumped (literally) to 290. I had not been able to reach 280 with the damper open full and exhaust open fully. Ok, WTF? The inlet for the cook chamber is at the top rear. Evidently the top foil pan was blocking the vents. I moved both pans down one rack, and bingo! Temps rapidly went to 290 and is holding nicely.:monkey:

I admit it. I am not smarter than a fifth grader

I've done that before on my UDS....foiled a butt and set it right up against the exhaust...LMAO..Live and learn.

Nope. Was just under a time constraint.
