Made some Mexican soup with the leftover smoked chicken from last night, it was awesome. Thank you to my wife!!!!

The soup is...

3 quarts chicken stock
3 Chipotle chilis (in adobo), chopped very fine
1 whole smoked chicken (pulled off the bone and roughly shredded)
4 big green onions, finely sliced
2 14oz cans of chick peas, drained
2 room temp avocado, diced (3/8" or so)
fresh ground black pepper to taste

Put the stock in a pot with the chipotle on low for a while so they can get to know each other, a few mins before serving turn up the heat and add the chicken, chick peas and, green onion. Just prior to serving add the avocado to a bowl and ladle soup over the top. and serve.

The side is just a cheddar cheese quesadilla with some home made salsa, sour cream, and my hot sauce.

This really is a great soup, for being stock based it's pretty hardy.

Never had hot avocados. Now I guess I'll have to try it.
