I'm bored with the Four Meats, (never thought I'd say that) so I have made a point to try to cook new things (for me that is!)

And I'm havin' a blast!

Italian dressing marinated Pheasant, Dizzy Pig "Shakin' the Tree" covered with Apple smoked Berkshire bacon strips.

Wicked Good lump and Apple splits for smoke @ 250* dome temp.

Next up we have some Lamb Short Ribs, the butcher called the cut a "Denver Plate", who am I to argue? I asked for something different and it did not disappoint!

I used Superior Farms California Garlic Lamb & Veal seasoning, its pretty mild, but forms a flavorful crust on the meats.

Also picked up a selection of fresh sausage for the week, and decided to try some Elk links.

I planned to use the smoked Pheasant on salads during the week, but we couldn't resist a few slices!

Excellent work.

Having eaten a ton of pheasant in my life, while you did a great job with it, it doesn't get my juices flowing. Now if it was done with Rooster Booster instead of that Dizzy dust stuff???:shrug::blushing::roflmaoha0:

The lamb, however, has me wanting some NOW!

I've never seen that cut, but I will find it and do some up in the very near future.
