I posted today my new rotisserie and ring for the Topper. Now it's time to share the first cook. I seasoned a whole fryer with Chef Merito Chicken Seasoning. Or Sazonador para Pollo. This was a free sample I received at a food show I attended last Sept. I wasn't excited about it; don't know why. I recently opened it for a taste. Dayumm! A little salty right outta the shaker, bur otherwise very tasty.

I let 'er marinate while I worked on the rotiss ring. When I was satisfied that the spinner was gonna work OK, I fired up a basket of mesquite lump and mesquite chunks. I brought it up to 325 and put the spit in place and turned on the motor. I say 325, but that was measured on the top grate of the Topper. The rotiss centers a good ten inches higher, so who knows?

I later bumped it up to 375. It cooked a good 2-2.5 hrs. Browned nice and even. Crispy-chewy skin. And OMG what flavor!! The Pollo Sazon ROCKS! This stuff is not a BBQ rub per se, but it is MARVELOUS on smoked chicken! Gotta think it would be good on pig too.

You just can't beat rotisserie chicken. It is good on its own but the left overs can be made into so many things.

Looks great Tom.

Just curious, in a couple of the pix it appears as though the spit fork on one end is almost totally backed out of the bird. What held it in place?
