Made me some cracklin corn bread the other night. Looooove that stuff!

Not sure what "Cracklin" is supposed to mean, but I'd eat a slab of that!

When I was a kid, they would wash the intestines and fry them up and use the lard and "Cracklin" (intestines) to make the corn bread. Now adays most people use bacon and bacon grease.

Sorry but Cracklins are chunks of meat that the lard has been rendered from.What remains after rendering lard from pork meat. Now intestines are called Chitterlings (Chitlins) where I am from.
The orange/yellow in the cornbread(yellow meal)is from photographing with a cheap camera.:D

Things are different in different parts of the country. When I was a youngster ( whew, that was a while ago ) we bought our bacon in whole slabs that you hand sliced and saved the bacon rind. We then cut the rind in pieces, slicing off some for beans:wow: and other cooking needs that needed bacon flavoring. Rendered fat was used for sourdough bisquits, cinnamon rolls, et. Finally the remainder was was deep fried into our version of kracklins.:thumbs up: Thanks folks for bringing back some fond memories. E.T.

I like getting a big glass of cold milk and crumble up some corn bread in it and it for my desert.

I made some corn bread the other day and tonight there was I slice left, warmed it up and put some pepper jelly on it. Now that was some good eats.
